Hey hey hey! I hope that everyone had a great Thanksgiving! We had a wonderful time visiting with family! I’ve gotten into that part of the semester where your slammed with papers and projects. I’m down to 2.5 weeks left until graduation!!
Today I have another breakfast recipe! I’m the type of person who can eat the same thing for breakfast over and over again every day. Then when I get tired of it, I’m TIRED of it! lol While we were in Myrtle Beach, I got these frozen Jimmy Dean egg cup things. They were really good! I had two versions, bacon and cheese and spinach and cheese. They didn’t seem to complicated, so I thought I’d try to make my own when we got home.
Turns out, it was very easy, and tasty! I’ve made a bacon and cheese version and a spinach and feta version. I love both! Here’s a simple run down on how to make them.
Prepare your fillings. So if you want bacon or sausage, go ahead and cook that first.
Spray a muffin tin with some oil. Add the filling to the cups. For my bacon and cheese cups, I like to put the bacon on bottom and cheese on top.
For my spinach and feta cups, I like to layer the spinach and feta.
Next, scramble your eggs in a bowl. I use 1 egg per cup I’m making. I actually do this in 2 batches of 6 eggs. I also add a little salt and pepper while I’m stirring the eggs.
Fill your cups with egg.
Bake in 350 degree oven for 25-30 minutes depending on how done you like them. I like mine pretty done, so I leave mine in closer to 30 minutes.
Store them in an airtight container in the refrigerator. I eat 2 a day, and I haven’t had them go bad on me, so I’d say they last at least 6 days. If you waned to make more or have them last longer you could probably freeze them.
I reheat 2 in the microwave every morning for 1 minute. It makes breakfast so easy!
